Programs of Study

The Food Science program provides an opportunity to pursue and study a variety of disciplines. The courses in the Food Science curriculum are designed with two broad goals in mind. First, to assist students in general to develop a greater understanding of the fate of agricultural raw materials, and how such materials are processed and formulated before being presented to the consumer; and second, to provide a major study program related to the technology of foods. The program allows a student with specific interests in food to develop a considerable knowledge base in this area. The following courses are offered at the undergraduate level in the Department.
  • Food Chemistry
  • Food Analysis
  • Food Microbiology
  • Food Engineering
  • Food Processing
  • Quality Control in Foods
  • Processing of Animal Products
  • Baking Science & Technology
  • Frozen Dairy Products
  • Cheese/Fermented Milk Products
  • Analysis of Water and Wastes
  • Food Toxicants
  • Food Safety
  • Food Science Seminar
  • Product Development
  • HACCP
  • Food Packaging
  • The Department offers a four-year undergraduate program leading to a Bachelor of Science in Food Science [B.Sc.(F.S.)] degree. All courses in first year and some in second year are prescribed. The remainder of the second-year courses and all in the third and fourth years are related to the major field of Food Science.

All students in first year must take the following required courses:

  • chemistry,
  • calculus,
  • algebra,
  • economics,
  • introductory agriculture, and
  • biology.
  • Course descriptions, prerequisites and other pertinent information are available from the University of Manitoba General Calendar.

Information on admission to our undergraduate program may be obtained from http://www.umanitoba.ca/students/admissions

    Graduate Program

Master of Science in Food Science
Master of Science in Foods and Nutrition
Doctor of Philosophy in Food and Nutritional Sciences

Degree programs at the Masters level are offered in the Department of Foods and Nutrition and the Department of Food Science. Programs at the doctorate level are administered through the Interdepartmental Ph.D. program in Food and Nutritional Sciences involving the Departments of Foods and Nutrition, Food Science, and Animal Science. Admission usually requires a research Master's degree in an appropriate discipline (food science, human nutrition, biochemistry, microbiology, etc.)
