  • Consumer evaluation of meat products.
Current Research Project
  • Biochemical study of rapid discolouration mechanisms in Bison meat.
  • Carcass and meat quality outcomes associated with fetal programming.
  • Essential oils as alternatives to in-feed antibiotics to enhance chicken growth performance, and mitigate white stripping/wooden meat incidence.
  • Effect of feeding canola meal supplemented with commercially produced enzymes to pigs on growth performance, pork carcass traits and meat quality.
