Mandana Amir Shaghaghi, MSc. RD.
PhD. Candidate at University of Manitoba
Research interest: Nutrigenomics and Cholesterol metabolism
Primary supervisor: Dr. Peter Eck
Co-supervisor: Dr. Peter Jones
Thesis: Does infant feeding practice (breast milk vs. formula) affect later life cholesterol metabolism?
Hypothesis: Cholesterol metabolism becomes epigenetically imprinted depending on early feeding practices.
Objective: To determine the epigenetic and metabolic mechanisms underlying the described phenomena.
Jaime Clark
My background info: This year I graduated from the Faculty of Human Ecology at the University of Manitoba with a Bachelor's degree in Human Nutritional Sciences. I am completing my Master's degree with Dr. Carla Taylor and Dr. Peter Zahradka at the University of Manitoba and at St. Boniface Research Center. My area of interest includes the effects of functional foods on cardiovascular diseases; in particular, the effects of lentils on endothelial dysfunction. My graduate work will be on investigating the active components in lentils and their potential mechanisms on reducing arterial stiffness in animal models.
Jessay Gopuran Devassy
Jessay has been investigating the effects of various dietary macronutrients on kidney health. One of his recent projects looked at how the amount and type of protein in the diet affect kidney structure and function in normal as well as partially compromised kidneys, as seen in obesity. His current research interest is in revealing the mechanistic role of oxidized phospholipids and other lipid metabolites from dietary oils in the disease progression of polycystic kidney disease. He has his undergraduate degree in Chemistry, M.Sc and M.Phil degrees in Biotechnology. He also has five years of experience in teaching Biotechnology and Plant tissue.

Erin Goldberg
Erin Goldberg graduated with a BSc in Human Nutritional Sciences from the University of Manitoba in 2009. She is currently working towards her PhD in the same Department under the advisorship of Dr. Jim House and Dr. Michel Aliani, where her research centers around the deposition of desirable fatty acids in table eggs through designer layer diets, with an added sensory science component. Erin currently serves as the President of the Human Nutritional Sciences Graduate Students’ Association.

Sunday Malomo
Sunday MALOMO is a Graduate Research Assistant with Dr Rotimi Aluko of the Department of Human Nutritional Sciences. He is currently studying for his Ph. D (Human Nutrition) in the areas of bioactive peptides and functional properties of food proteins. His particular interest is in the use of bioactive peptides from hemp seed proteins to formulate nutraceutical products serving as Acetylcholinesterase inhibitors in the treatment of pathogenesis of Alzheimer’s disease. He had his both first and second degree in Food Science and Technology with Honours from Nigeria and he is a recipient of several scholarly awards, scholarships and fellowships from many Local, National and International bodies; among which include University of Manitoba Graduate Fellowship (UMGF) and Manitoba Graduate Scholarship (MGS).
Catherine Marshall
Catherine is a second year Masters student in the department of Human Nutritional Sciences. Her thesis project is a mixed-methods study exploring the body perceptions, aging attitudes, and food choices of baby boomer and older women. Having completed the dietetic internship and national registration examination, she is also qualified to practice as a Registered Dietitian in Manitoba. Catherine has a strong interest in body image issues, eating disorders, healthy aging, and the psycho-social factors that influence food choice, and hopes to work in one of these areas after graduation. Outside of graduate studies, Catherine sings in an award-winning community choir called "Prairie Voices", is an active member of the Dietitians of Canada Student Network, and is editor of the Dietitians of Canada Addictions, Mental Health & Eating Disorders newsletter, "Mental Notes".

Rukmini Sen
PhD. Candidate at University of Manitoba
My current PhD research under the mentorship of Dr. Christina Lengyel, explores consumer segmentation, nutrition practices, health attitudes, and key drivers for food preferences among Manitoban rural and urban dwelling baby boomers (born 1946-1965). The results of this study will impact nutrition and health educators and the food industry (food producers, marketers and developers) in Manitoba. Apart from my Ph.D. I am also doing a Specialization in Aging that will expose me to the areas of nutrition and aging, where there is a huge demand for nutrition professionals to conduct research and educate the public. I would like to do collaborative work with the food industry and the government in changing food and health policies in regards to aging.
